Healthy Snack- Cherry Granola Bars

Another recipe submitted by Abigail and Bryant Callahan from This one looks tasty! The beautiful thing about this recipe is you can customize the ingredients. Don’t have almond butter? Use peanut. Don’t have coconut oil? Use butter. Seriously, use this as a launching pad for your own creations!




Cherry Oat Bars – yields 9 bars

Coconut oil (to brush pan)
3 cups rolled oats
1/2 cup dried cherries unsweetened
1/2 cup dried dates unsweetened
2 tsp cinnamon
1 tsp salt
1/2 cup almond butter, room temp
4 Tbsp flaxmeal
1/2 cup applesauce unsweetened
1/2 cup honey
3 Tbsp orange juice
1/4 tsp vanilla extract

Heat oven to 350 degrees. Brush an 8-by-8-inch pan with coconut oil.

Combine all the wet ingredients (almond butter through vanilla extract) in a mixing bowl, stirring to combine. Add the dry ingredients and stir to thoroughly combine.

Press the mixture evenly into the greased pan with your fingers. Bake on a rack in the middle of the oven until golden brown and firm, about 30 minutes or until toothpick comes out clean. Don’t let them cook too long or the bars will dry out. Cool completely and then cut into 9 bars.
