When it’s hot outside, I try to not be over the stove, so we make simple dinners with fresh ingredients that cool us down. Here’s a simple summer salad:
1 head romaine
strawberries, washed and sliced thin
6 basil leaves, washed and sliced thin
Assemble all the ingredients and toss in a big bowl. Serve with dressing of choice, nothing too overpowering or heavy. I made a quick vinaigrette with olive oil, raw vinegar, 1 tablespoon dijon, 1 tablespoon italian herb mix and salt to taste. The ratio of oil to acid is 2:1. Mix mustard and vinegar in a bowl, whisk well. Add oil very slowly and keep whisking, then add herbs and salt to taste. Add a little more oil if it’s too tangy.
